We buy small and we buy often, which is why the menu is short and why it moves. If something is not right that day, it comes off — you will not be sold a dish the kitchen is not proud of.
The room seats twenty-eight. That is deliberate. It is the number we can cook for properly without a second kitchen or a bigger brigade, and it is the number that keeps the room quiet enough to talk in.
